Hannah has never really been much of a breakfast eater. I attributed it to nursing all night--well now she's pretty much night weaned and still doesn't exactly gobble tons of breakfast down, even after no nursing for 8-10 hours.
Is there anything I can do to encourage better breakfast eating or should I just go with the flow?

I'd just go with the flow. But you probably already guessed that would be my answer ;)

I'm not a big breakfast eater either. Only 2 of our DC care for breakfast.
She will let you know when she is hungry  Maybe just have a big lunch? Fruit & cheese for snacks. She may outgrow this stage too.

flow away baby....their eating patterns change constantly through childhood as their bodies direct....I'd follow her bodie's little lead!

Yup, hoppin' on the 'flow' wagon here. None of my kids are big eaters, ever, for any meal... and they're older now. They never outgrew it. They eat whatever is placed in front of them with smiles, but I intentionally don't put that much on their plates when I serve them up because they fill up quickly. They serve themselves most of the time now for most meals, and they really don't appear to have very large appetites. Oh, and they don't snack, either, so I know they aren't filling up before meals.
What I've always done is, make sure what they do eat counts. I'm sure you're already doing that with the way your family eats. [OK]

Yup, I definitely try to make sure that she's not filling up on stuff with little nutritional value and to offer lots of nutrient dense foods.

Definitely say go with the flow.
If you try to be too rigid with mealtimes/quantities, you risk training her to ignore her own hunger cues, which could spell big trouble later. You don't want her to eat by the clock.
My sons always wake up starving and want breakfast as soon as I can possibly get it together. It has ALWAYS taken my daughter at least an hour to be hungry at all in the morning. She often eats something light mid-morning and then lunch with the rest of us.

it doesn't matter what time I eat dinner, wether it be six in the evening or ten at night. I don't want to eat anything else until around noon the next day. Always been that way. My kids are the same way. Dh has to make himself eat something small before then.
I wouldn't worry about it. She'll eat when she's hungry.
