Hi there C'Moms. I have just been slammed busy lately. I can't guarantee that I will be back on a regular basis but probably weekly anyway to chat with you all. I have learned a lot here, and I value the community.
I have 3 boys, 7, 5, and 2.5 years old. They are all at different schools, and plus the extra events. We have recently started the GFCF diet for my 5 yo, who is autistic and cognitively impaired (retarded). It's very time consuming to do, since you have to read every label, and make almost everything from scratch. I've never cooked so much in my whole life. Where in the past I would have bought a pumpkin pie at Meijer for $3.99, this year I spent over 3 hours and who knows how much money making one from scratch. Pumpkin, tofu, honey, egg, guar gum, tapioca flour, rice flour, etc. It's been a whole pantry re-do. The only thing that's the same on the staples list is eggs. I bake the bread because I can't stomach paying $5 for a tiny little loaf.
I was also working full time, substitute teaching. A teacher broke her arm and I was in for her almost all of 1st quarter. 7th grade Language Arts and Study Skills. 150 sets of homework, 2 sets of lesson plans, oh it was killing me. It was definitely an affirmation of my decision not to go back to work full time. I was so very happy to see the end of the quarter!! I had a house full of work to catch up on and about a million errands. I am still wading through my very long to do list that has been accumulating.
Normally, I am already done with Christmas cards and Christmas shopping by this time, and I am only about 1/3 of the way there.
