View Full Version : Green leafy veggie ideas

Last week I did great on my protein, not so great on my veggies. (DH's and my childbirth class requires me to turn in a food log every week)

So this week I'm trying to eat more green leafies. I tried making stir fried collard greens and they were wonderful! Does anyone here have any favorite green leafies or recipes for them?

I usually put fresh spinach in my lasagna and leave out the hamburger.

Spinach salad is really good!

Just mix fresh spinach leaves, bacon (you can use the kind that are the real bacon bits), tomato, onion, and ranch dressing together! It's so good!

I keep a bag of fresh spinach leaves in my fridge and throw them in almost anything. I chop them and put them in meatloaf, chicken salad, eggs, wraps, sandwiches, almost any casserole, and sloppy joes.

Yep- Spinach in everything from pasta to pizza to salads on sandwiches (turkey, bacon & spinach, mmmm)...

What about broccoli? Yah, I know... it's not leafy... but it's green. :oops: And yummy! That must count for something. :D

I absolutely LOVE vegetables - but one thing that is delicious is called Ginger Cream Pumpkin... all you do is steam the pumpkin, buy some fresh cream and add a teaspoon of ginger (to perhaps quarter to half of a cup of cream) and pour it over the pumpkin - DELICOUS.

Pumpkin is full of iron so it is fantastic during pregnancy.

There is always the traditional cheese sause on veggies, which is YUM too (that way you are getting calcium and veggie minerals).

Honey glazed carrots are always nice.

I know you mentioned "leafy greens" but most veggies are GREAT (except for things like squashes etc which have very low mineral content).

Myself at the moment, I just can't get enough of steamed fresh veggies.

Have you thought also of panfried asparagus? Just add a tiny bit of oil to a skillet, wait until it's hot, throw the asparagus on there and cook fast and high - it releases a beautiful nutty taste in the asparagus.

We also tend to throw a handful of pine nuts over our veggies when they are steaming on the stove... that adds heaps of flavour!!!!

I use dark leafy greens in my salad that I try to eat every day!

our family loves steamed cabbage leaves....so mild with just a tad of butter and salt/pepper! super yummy and healthy!

I love green veggies and try to eat them, but unfortunately right now, they come back up later on. The nausea has settled some, but I still throw up, sometimes in the morning, always at night. (Sorry TMI). I love salads, and if I eat one, I pay for it later.

Thanks everybody for your ideas! Today I made sure to get EXTRA spinach on my subway sandwich. :)
