Hi,
I'm trying to come up with some simple and healthy yet quick lunch ideas other than the usual sandwiches and soups and leftovers. My dd is almost 2 yo and will eat almost anything. Any suggestions would be appreciated. Thank you!

My dd loves when we have breakfast for lunch. Simple pancakes or waffles with fresh fruit and scrambled eggs. They have little personal pizza breads and sometimes I throw a little tomato sauce on there and have my dd add cheese and other toppings that she wants. It makes for nice bonding time for us and she feels like a big helper. They only have to bake for 10-15 minutes so it doesn't take too long.

we use the whole wheat tortillas and low fat cheese and chicken and veggies to make low fat and healthy quesadillas....easy, not messy if not filled much, and kiddo goes crazy for them!

Meat, cheese,crackers and cut up cucumbers were always a hit with my toddlers.

Some of ds' favorites:
-baked sweet potato fries
-grilled cheese (cheddar, queso, pepper jack...anything sharp) with cherry tomatoes
-quesadillas (whole wheat tortilla, cheese, green peppers, onions, pink beans)
-baked beans with soy crumbles (like Boca Grounds)
-whole wheat noodles with margarine, romano cheese and broccoli

Some of my ds's favorites are
- english muffin mini pizza's
- tuna melt on english muffins
- garden burgers
- fish sticks look carefully some of these have unneeded trans fats
- stromboli (take a pillsbury pizza crust, spread pizza sauce or miracle whip or any other spread on it it top with whatever meats and veggies roll up and bake)
- breakfast burrito's
- whole wheat crackers dipped in chicken salad or hummus

Some of our lunches:
pb sandwiches
turkey sandwiches
grilled cheese
turkey n cheese roll ups, on tortillas, sometimes "grilled" in sandwich maker
pb on tortillas
jelly and cream cheese often w/diced fruit on tortilla
pizcuits (recipe at blog)
fruit with yogurt dip
pb crackers with a smoothie
cheese & crackers
pasta, generally with a dab of butter and some parmesan cheese
mac & cheese (boxed 'healthy' variety LOL (do ya hear the sarcasm?))
frozen pizzas (I do cook them first ;) )
and quesadillas
That's my list for 9, 7, 5, and 3 yr old :D

Forgot his other 2 favorites:
-toasted peanut butter and jelly
-homemade mac and cheese
-breaded and baked tofu with tomato sauce for dipping
