A good veggie meal that our family enjoys is bean wraps. Here's the recipe -
1 can kidney beans, drained and rinsed
1 can corn kernals, drained
1 can chopped tomatoes
1 chopped onion
3 teaspoons crushed garlic (or 3 chopped cloves)
little bit of olive oil to prevent sticking
wholemeal flatbread wraps
Heat oil in saucepan, add onion and garlic, cook til onion is soft. Add in beans, corn, tomatoes. Simmer til thick. Spoon into wraps, fold up, bake on a tray in a 180 degree oven until slightly brown.
These are great, because you can fiddle around with them. You can use dried beans and fresh corn and tomatoes if you're avoiding canned stuff, you can use all organic stuff, you can add cheese to your wraps, etc. You can add spices if you want to give it a bit of zip, such as cumin or chili. It's a really versatile recipe!
Another way is to serve it over rice. From what I understand, the beans/rice combo creates a "perfect protein". Enjoy!
