Maybe I should have posted this in homeschool, but in any case, I want to do a bunch of gingerbread activities next week. We'll bake gingerbread men, and do a sewing craft with brown felt and yarn and anything else I can think of. I'm looking for any ideas for books to read. I know there are a few out there, but don't remember what any are called. Any gingerbread craft activities are welcome too! TIA!

Easy 'gingerbread' houses...graham crackers and almond bark ;)
That's all I have off the top of my head...like you, I know there are books, just drawing a blank and must must must check this school work next to me...2 days worth! :p But I'll try to get on that when I have the chance.
I know there are paper doll type sites where you could print off the template for them to cut/trace/color/embellish...using construction paper or tag board (that's what it's called, right?)
I'd also suggest different recipes...gingerbread cookies AND gingerbread (I'm still, personally, planning on each..I've never made actual gingerbread..am anxious to do so!)

Last year my MIL bought a kit for doing a house and cut out men with the girls (she is a fan of that sort of stuff, and I will admit, I didn't mind as I didn't have to buy it, cook it and deal with dishes afterwards. It was messy enough) and it did turn out cute. Granted, half the candy for it got consumed by my eldest (then 2) and she was on a sugar high for two days.
You could try making the ginger bread men all connected doing a paper cutout. Not sure how that works as I have NEVER been able to do paper dolls that way.
Poster board would work for some big ones, and then decorate with glitter and sequins. It might be fun to put together a wall scene with them and a house.
Later this afternoon we are making paper candies. They were on the wall at church on Sunday by the preschool (our church houses a preschool) and what they did was take round paper plates (small ones, saucer sized) and then the kids took red and green tempra (we are using crayons today and I cut out paper circles as I don't have disposable plates) and did stripes on them (they were by the 2 yo class, needless to say the stripes weren't great) and then they took plastic wrap over them and tied the ends with yarn to look like wrapped peppermint candies. It was too cute. That would go well on a wall scene with a huge gingerbread house (if you did one to mount on the wall)
I too can't remember books on gingerbread. Guess someone must go google it. May as well be me. I'll let you know.

The only book that comes to my mind is "The Gingerbread man" the one where he runs off and everyone is trying to catch him, my boys love that story :-D

This is the book I was thinking of...we haven't had a chance to hit the library (not highly used where I live...we might have a chance to find it.)
In any case, we made gingerbread cookies today and are going to decorate them as soon as I sign off here! :D I've got my camera back, so I just might take some pictures!
